In San Dionisio Ocotepec, Oaxaca, Riazuleo Clasico is produced using agave Espadin. The agave for this mezcal is roasted underground in a pit furnace and distilled twice in a copper column still. Aromas of rich tropical fruit, sweet agave, and smoke pervade this wine. Sweet flavors of cinnamon, limestone, and minerals abound on the palate.
