Nose: From light citrus to pineapple, mango and kiwi notes, with the addition of figs and dates. A touch of walnut leads into the contribution of the seasoned American barrels and Spanish butts, vanilla and toasted oak.
Taste: A rich, round, creamy mouthfeel, with the sweetness of butterscotch, giving way to the prickle of the pot still spices. Succulent fruit brings the perfect balance as charred oak with some subtle tannin add to the complexity.
Finish: Exceptionally long, as the luscious fruit is slow to fade.
We can’t vouch for his singing voice, but our Head Blender, Billy Leighton, is in the harmony business. Our warehouses are filled to the brim with a huge variety of maturing barrels of whiskey, and Billy is the matchmaker who decides which barrels’ contents will complement each other. A sense of taste is Billy’s most important tool, but Blender’s Palate doesn’t exactly roll off the tongue so we named this whiskey after his second most important piece of kit. A dog is a utensil that a blender lowers into a cask in order to collect whiskey samples. True to its name, it’s always by his side. Years of experience and knowledge gives Billy a good idea what’s inside every cask, but whiskey making doesn’t lend itself to guesswork so this is where the dog comes in. Some things you need to taste for yourself. The Blender’s Dog is a perfect balance of spirit, wood and time. Billy has produced a rich, rounded whiskey that immediately announces butterscotch sweetness before introducing a prickle of spices and tannins and settling into an exceptionally long finish. Distillers are concerned with all things pot still, Coopers obsess over barrels and Blenders need to know the best of both worlds. This whiskey puts his craft into sharp focus. Making whiskey requires a fair deal of science, but blending is an art.
