The major distinction between tequila and mezcal is the botanical family to which each one belongs. Sotol, unlike those items, is made from the Sotol shrub, a member of the Asparagaceae family that grows wild in the desert.
Tasting Notes: Citrus fruit and grassy aromas follow earthy undertones. With a hint of citrus, this wine has a minerality to it. It has the flavors of a humid land and a woodland. Brilliant with a lengthy, lingering aftertaste and a distinct viscosity and density. Tangerine wedges, red meats, spicy shellfish, pig ribs, and mole negro go well together.
