Springfield - Wild Yeast - Chardonnay
Overview: Springfield Estate is a family-run wine farm owned by ninth-generation descendants of the French Huguenots, who came to South Africa from the Loire in 1688 with bundles of vines under their arms. The current and fourth generation to tend the rocky Springfield soils is brother and sister team Abrie and Jeanette Bruwer. The vinification methods utilized at Springfield are very traditional, with no added yeasts or fining.
The Springfield philosophy is to produce wine as naturally as possible using a combination of sometimes risky winemaking techniques, traditional methods, and modern technology, along with a sense of practicality and dogged determination borne from living off the land all their lives. The Bruwer family handcraft wine true to the Estate’s motto: Made on Honor.
Tasting Notes: This Chardonnay’s nose is like a bouquet of mangoes, pineapples and limes with a hint of honey. On the palate, the acidity is just right with green apples, limes and pears. Simple but perfect.
Pairing: Raw oysters, steamed clams or mussels, shrimp scampi, scallops and lobster and any white fish. Creamy soft cheeses or hard cheddars or gouda will go well with this wine.
