Overview: Springfield Estate is a family-run wine farm owned by ninth-generation descendants of the French Huguenots, who came to South Africa from the Loire in 1688 with bundles of vines under their arms. The current and fourth generation to tend the rocky Springfield soils is brother and sister team Abrie and Jeanette Bruwer. The vinification methods utilized at Springfield are very traditional, with no added yeasts or fining.
The Springfield philosophy is to produce wine as naturally as possible using a combination of sometimes risky winemaking techniques, traditional methods, and modern technology, along with a sense of practicality and dogged determination borne from living off the land all their lives. The Bruwer family handcraft wine true to the Estate’s motto: Made on Honor.
Tasting Notes:This Bordeaux Style Blend has a savory herbaceous spin to it. On the nose you get immediate notes of cloves, cinnamon and smoked meat with blackberries, black cherries, dried figs and prunes. On the palate you get plums and blackberries stewed in smoke and cloves.
Pairing: Smoked and grilled meats, a good quality burger, any blue cheese, soft creamy cheese or goat cheese.
