These are layered over deeper notes of toasted hazelnut, almond brittle, and warm butterscotch. The influence of the Chinquapin oak barrels becomes apparent with hints of crème brûlée, rich mocha, and dark caramel, all enveloped in soft cedar-wood undertones and a faint whisper of tobacco leaf.
Palate:
The texture is full and delightfully oily, coating the tongue with weight. Initial flavours lean into the high-rye structure: crisp rye toast, cracked fennel and caraway seed, and a glimpse of candied ginger. Then the corn-sweetness emerges: honey-glazed cereal, vanilla custard, and golden syrup, cushioning the spice. Mid-palate introduces richer dimensions—dried dark cherry, cocoa nibs, toasted pecan and a whisper of cigar box. The Chinquapin oak amplifies the wood influence: nutmeg, warm cedar, toasted hazelnut and a subtle smokiness. Underlying it all is a balanced interplay of grain-driven spice and wood-driven sweetness.
Finish:
This finish lingers. First comes the peppered rye echo—vibrant and alive—then it settles into toasted oak tannins and lingering brown sugar. A final flourish of coffee-bean bitterness melds with toasted almond and faint leather, while residual warmth climbs and fades gracefully. The wood leaves a lasting imprint: nutty, subtly sweet, and spiced—inviting another sip.

Introducing the Heaven Hill Grain to Glass® Rye – Chinquapin Specialty Barrel 2025 Limited Edition (700 mL), a truly distinctive expression from the renowned Bardstown, Kentucky distillery. This limited-edition rye marks the inaugural release of the Grain to Glass Specialty Barrel series, where every step—from seed to sip—is highly intentional and transparent.
For this 2025 release, Heaven Hill selected a specially grown corn varietal (Beck’s 6225) from regional farms, paired it with a richly structured rye-forward mashbill (63% rye, 24% corn, 13% malted barley), and aged the whiskey exclusively in hand-selected Chinquapin oak barrels—a seldom-used species of American white oak noted for its elevated vanillin content and deeply layered wood-influence. This rye was matured for six years, barreled at 107 proof and bottled non-chill-filtered at 53.5% ABV (107 proof).
The result is a premium, collector-worthy rye whiskey that celebrates craft, provenance and barrel innovation. Each bottle features an embossed “Family Owned Since 1935” marker, full mashbill disclosure, corn seed varietal, distillation & release years, and a tax strip highlighting the Chinquapin oak aging. Released in November 2025, this expression is available only in limited quantities and is designed for the serious whiskey enthusiast.
