Wittman - Estate Riesling - Trocken
Description
Overview: The Wittmann Estate Riesling Trocken is harvested by hand from estate-owned vineyards around the village of Westhofen. It is fermented with native yeasts and matured in large, neutral oak casks. The wine shows a deep, stony aroma, with an elegant structure and bright citrus juice that leads to a lingering, piquant finish. All of the Wittmann estate’s vineyards are certified Organic by Naturland, a German certification organization for Organic agriculture. The vineyards have also been certified Biodynamic by Respekt Wine, an organization based in Austria.
Tasting Notes: Aromatically this wine has classical notes of lemon zest, lime zest, a hint of honeysuckle, and the pith of a peach. On the palate there is a bright, bracing acidity as well as a structure of stone and chalk flavors.
Pairing: Roasted squash
