With nearly two decades of homebrewing experience and a doctorate in chemistry from UC San Diego, our head distiller Justin McCabe has chosen to weave these two passions together to reinterpret traditional spirit recipes.
117° West White Rum is fermented from 100% sugar cane with Champagne yeast making for a very light and smooth spirit. It does not contain molasses like many other rum recipes and is therefore more similar to Brazilian Rum or Cachaca. Makes a great Daiquiri or Mojito and is used as the base for our spiced and aged rums.
