Overview: Xisto Ilimitado Branco, with its minimal interventionist winemaking, offers a fresh, mineral-driven white that beautifully showcases the region's dominant schist soil. The grape composition isa blend of Rabigato, Gouveio, Códega, and Viosinho, from 30-45 year old vines planted at an elevation of 500-600m. The vineyards are located in Cima Corgo, a subregion known for its extreme temperature variations, leading to extended fruit hang-time.
The vinification process involves 90% fermentation in used barrels and 10% in stainless steel, all with indigenous wild yeast. Aging occurs in 90% used barrels and 10% stainless steel with one year of lees contact without battonage.
Tasting Notes: Bright straw yellow color, with stone and orchard fruit aromas, flinty wet stone, and white pepper. The palate is impressively bright and mineral-driven, balancing power and lift, with flavors of lemon, green apple, bosc pear, a touch of floral tone, and slate minerals. The wine is juicy and mineral-driven, making it a standout offering.
