Agave Espadin is used to make Alipus San Baltazar. This Mezcal is fermented in very old pine vats by Don Cosme Hernandez and his son Cirilo. Their Mezcals have a soft, fruity taste with a hint of minerality. San Baltazar is the most popular Alips in Mexico (by sales), so it may be more restricted outside of the country.
