Overview: Xisto Illimitado is a Portuguese wine that mirrors the concept of a "village" level Burgundy. It's a blend of seven varieties grown across three subzones in the Douro, providing a snapshot of the schist-driven terroir in the region. It's unique for its minimal interventionist winemaking and its fresh, mineral-driven red that showcases the purity of fruit achievable in the Douro valley. The grape composition includes a blend of Touriga Franca,Tinta Amarela, Tinta Roriz, Rufete,Tinta Barroca, Malvasia Petra, and Donzelinho Tinto. The sustainably farmed vineyards were planted between 1960 and 1980 in schist soil at an elevation of 400-600 meters. The vineyards are located in Cima Corgo, a subregion with extreme temperature variations, leading to extended hangtime for the fruit.
The vinification and aging process involves 30% fermentation in stone lagar with foot pigeage and the remaining 70% in vat, all with 100% whole cluster. The wine is then racked to a neutral barrel for a year followed by five months in a tank, with 100% natural yeast fermentation.
Tasting Notes: Bright garnet color, high-toned red and blue fruit aromas tinged with wet stone and violets. On the palate, it's lush but balanced with bright acidity, red cherry, and pomegranate fruit. White pepper, slate, and herbal aromas overlay the core of fruit on a juicy, fresh finish.
Pairing: Pairs well with roast game or poultry, or ratatouille.
