Like tequila, the horse and charrería culture reflect many of the same core values to produce a noble steed like producing a noble spirit. This ideal ties into the very essence of Jalisciense culture, the desire to always do things the right way, by using time as one's greatest asset.
We present to you an extremely limited, single barrel Añejo pick by Atlas and Mason’s George LaBoda; gentleman, bourbon expert, and close friend of CABAL.
These 100 bottles are George’s first ever single barrel bourbon pick but also the only Sonoma Distillery Barrel to ever house any tequila.
Sonoma Distillery's Cherrywood Smoked Bourbon is uniquely delicious spirit that cold smokes 13% malted barley with cherrywood fire. Our award winning organic blanco spends 13 months in a half size barrel, thus allowing our blanco to directly engage more often with the wood walls, increasing both the flavor and complexity to give you a balanced and elegant Añejo.
The custom ombré horse bottle was a vision George had from the onset of this project. Inspired by CABAL’s Extra Añejo matte black bottle, the desire was to showcase the dark amber hues of the Añejo along with the bold and striking presence of a dark horse. This one of a kind bottle and neck tag highlight the detail, intention and elegance meant to carry a spirit that should only be matched by the spirit of the company you keep.
Tasting Notes:
Aroma: sweet cooked agave, deep and savory notes of dried apricots, peaches, and plum layered with hints of dark chocolate and peppered orange zest
Palate: sweet cooked agave beautifully layered with both bright notes of tangerine citrus and dried pitted fruits finishing with a viscous and balanced undertone of cacao and robust baking spices.
