Description
Master vinatero Roberto Contreras uses wild Sonoran Dasylirion wheeleri (locally known as palmilla) to create Rancho Tepua Palmilla. The palmilla is roasted in an underground pit oven for 48 hours, fermented for 8-12 days with spring water, then distilled in copper and stainless steel.
