Domaine Chanson - Savigny-Dominode - Premier Cru
Overview: 45 ha owned exclusively in Premiers and Grands Crus, in the heart of Burgundy, in the most beautiful villages of Côte de Beaune : Santenay, Chassagne Montrachet, Puligny Montrachet, Beaune, Savigny-lès-Beaune, Pernand Vergelesses and Corton. The construction of this real defence tower was decided under Louis XI and achieved under François Ier. Built as a defence tower and classified as an historic monument with its 8-metres thick walls, it became the property of Chanson under the Revolution. The constant temperature and humidity guaranteed by its walls make it an ideal cellar. Today on 4 different levels, the fourth built in 1826, the Bastion Chanson is entirely dedicated to wine ageing. The first three house red wines where each floor is destined for a vintage. As for the fourth floor, it accommodates white wines.
Tasting Notes: Dark ruby colour. Intense aromas of blueberries and elderberries. Well-structured and dense. The tannins are quite present and give an idea of the excellent aging capacity of this wine. Long aftertaste. This wine bears similarities with some crus of the Côte de Nuits, like Chambolle Musigny.
Pairing: Roasted Flank Steak, Venison in a Red Wine Sauce
Points: 94 James Suckling, 93 Wine Spectator
Format / ABV: 750 ml / 13
