Georges Remy is a grower-producer from Bouzy, in the Montagne de Reims region of Champagne. Coming from a family of vignerons dating back to 1629, Remy transitioned from winemaker to estate bottler, quickly gaining recognition for terroir-driven cuvées. His wines are known for their minimal intervention, low dosage, and expression of Grand Cru vineyards.
“Le Mont de Tauxières” 2016 is sourced from a single vineyard and represents the purity of Bouzy’s chalky terroir. This is a vintage Grand Cru Champagne made in limited quantities, reflecting both the uniqueness of the 2016 harvest and Georges Remy’s precise, artisanal craftsmanship.
Pairing:
This Champagne pairs beautifully with oysters, scallop crudo, triple-cream cheeses, or a citrus-dressed endive salad. Also excellent with roast chicken or sashimi.
