Overview: At J Vineyards, all sparkling fruit is hand-harvested at night in cool temperatures to ensure the grapes remain in peak condition. An ultra-gentle pressing in our Coquard presses (rarely found in the U.S., and one of very few in California) prevents astringency or bitterness, and ensures a clean, refreshing mouthfeel. And the same high level of attention and care is poured into each still varietal as well, creating a portfolio that is consistently lauded and always enjoyed.
Tasting Notes: Smooth and incredibly flavorful on the mouth, offering richness and depth at the mid-palate as layered notes of juicy pear, white peach, ripe citrus and sweet green apple are contrasted by hints of florals and minerality. The wine’s bright, lively acidity brings a delightfully crisp and refreshing finish.
Pairing: Enjoy this food-friendly Pinot Gris alongside raw oysters on the half-shell with pickled green strawberry mignonette or, for a heartier choice, pan-roasted pork chops with a peach chutney. For a cheese pairing, try with crescenza cheese topped with fresh peach and basil.
