Description
Overview: It is obtained from 100% Ciliegiolo grapes, coming from two vineyards planted in San Gemini, one in Colle Ozio and the other in Colle Pizzuto. The soils are located at 230 – 290 meters above sea level and are of a medium-textured calcareous clayey type. The vineyards are between 5 and 15 years old, bred in the the Guyot system with a yield of between 700 and 800 grams per plant. The grapes are harvested manually and collected in 20 kg boxes.
Fermentation is spontaneous and lasts about 6-10 days. After racking, it ages in stainless steel on its fine deposits for about 6 months. After bottling, Asla remains in our cellars for another 1-2 months. The annual production is 4,000 / 6,000 bottles.
Tasting Notes: Rich and intense
Pairing: Its elegance and softness allows the classic combinations with dishes of cured meets, red and white meats and semi-seasoned cheeses, ideal with truffles.
