Obsidian - Ridge Vineyard Estate - Cabernet Sauvignon
Description
Overview: The Obsidian Ridge vineyard is planted at 2,640 feet above sea level upon the Mayacamas Mountain Range in Red Hills Lake County. The vineyard's red, volcanic soils are also shot with obsidian glass and gravel. The blend is nearly entirely Cabernet Sauvignon, with a touch of Petit Verdot and Malbec, and the vines were planted back in 2000. Young wines are aged exclusively in Tokaj oak by Kádár, the cooperage Obsidian has owned for nearly three decades. Located in Kádárok Völgye (Valley of the Coopers), this region of the Tokaj appellation has a written history of over 1,000 years of coopering.
Tasting Notes: The Estate Cabernet is the signature wine of Obsidian Ridge and embodies the complexity and wildness of the site. The structure and intensity of upper blocks is complemented by aromatics and acidity of cooler blocks. Aromas of freshly-cut red cherries with hints of cinnamon and spice. Flavors of mulberry and plum, woven with dried oregano and chapparal, are supported by a rich texture of fine, leathery tannins. Notes of star anise, cinnamon, and orange peel inspire pairing with Meditteranean dishes. Fresh acidity keeps the wine lively on the finish.
Pairing: Beef and venison
