Opaque - Darkness - Paso Robles
Overview: The word "opaque" means “impenetrable to light” and refers to the dark, inky, impenetrable color of the Riboli family’s proprietary blend. Opaque Darkness brings together the impressive quality of our estate grown Zinfandel, Syrah, Cabernet Sauvignon, Grenache, Petit Verdot and Petite Sirah grapes. After aging in French and American barrels for 14 months, our hand-crafted artisan blend reveals ripe flavors of raspberry and blackberry with notes of spice and vanilla. Enjoy the darkness!
Opaque Darkness comes only from the best lots that our estate vineyards have to offer. Small lots are picked and fermented individually with minimal intervention to allow the true expression of the soil and climate. The wines are matured in a unique selection of hand-crafted French and American oak barrels.
Tasting Notes: Very rich and extracted aromas of black-plum sauce and coffee bean show on the nose of this 50-50 blend. The richness is on the palate too, where blackberry-syrup, grape-seed and caramel flavors converge.
Pairing: Opaque Darkness is an interesting wine to pair. The flavor profile evolves from the forefront of your palate to the finish. We suggest trying it with cheeseburgers, shephard's pie, or green bean casserole. .
