Description

Overview: From the very beginning, Quivira has been committed to maintaining the integrity of the estate to make farming a long-term proposition. Quivira was among the first vineyards to become certified biodynamic in the United States, earning the certification in 2005. Since 1998, Quivira has been actively engaged in restoring Wine Creek, the Coho salmon and Steelhead trout spawning stream that winds through the center of the estate. The iconic 140-year-old Fig Tree, has been preserved as a landmark.

From Quivira's founding nearly four decades ago, their winemaking philosophy has embraced the “one foot Old World, one foot New World” approach. The Sonoma County Sauvignon Blanc embodies this and is the perfect gateway to showcase the region’s exceptional soils and climate particularly suited for this noble grape variety.

After field sorting the fruit before it reaches the winery, the grapes are gently whole cluster pressed to retain acidity. Cool fermentation emphasized varietal character and terroir nuances. A high percentage of fermentation in stainless steel is used to enhance the acidity of the wine, which was balanced delicately with a combination f selected new and neutral French oak and acacia barrels for complexity and depth. A small inclusion of Semillon was used to layer in flavor and texture as a final touch.

Tasting Notes: Aromatically the wine has a combination of citrus and tropical fruits, layered with slight notes of fresh cut grass. On the palate the wine is delightfully linear, with a certain purity and cleanness on the back palate.

Pairing: Salads and green vegetables

Points: 92, Wine Spectator

Format/ABV: 750 ml/13.30%
