San Simeon - Sauvignon Blanc - Paso Robles

Overview: Two vineyards from the relatively new Creston District AVA in Paso Robles were the source for our San Simeon Sauvignon Blanc. Comprising 53% of the blend, our Riboli Creston Vineyard features rolling hills and well-drained Arbuckle-Positas soils. At 47%, our Creston Highlands Vineyard has a steep terrain with soils derived from calcareous marine deposits. One of eleven sub-districts that make up the Paso Robles AVA, the Creston District is warm and dry yet tempered by cooling breezes flowing through the Templeton Gap to the west; this area’s diurnal temperature swings can be as high as 50 degrees, ideal for long growing seasons.
Tasting Notes: Intense aromas of white flowers and honey with fresh, grassy notes on the nose of this bright, well-balanced wine. The rich palate shows classic Sauvignon Blanc flavors of bright citrus, pear, and lime zest along with a slight hint of minerality.
Pairing: From traditional cheese and salad pairings to heartier dishes, the San Simeon Sauvignon Blanc pairs beautifully. One particular favorite is swordfish with basil pesto linguine.
