Overview: Established in 1947, Azienda Agricola Massimo Rivetti is dedicated to returning Piemontan wine to traditional farming and winemaking methods with its 70+ year-old vines. In the vineyard, this means planting 20 different types of herbs around the vines to avoid using herbicides. Pheromones are used to “confuse” insects so that pesticides aren’t needed either. Harvest is done exclusively by hand. Fermentation is conducted using only indigenous yeast from their own grape skins, and the use of sulfites is minimized without compromising quality. (about 70% less than the industry average).
Tasting Notes: Clean aromas and flavors of dried red cherries and tightly packed spice follow through to a medium to full palate with lightly firm tannins and well-defined, crisp, flavors.
