Cote de Brouilly - Chateau Thivin
Description
Overview: Thivin is a Côte de Brouilly institution: the magnificent château dates back to 1383, and the Geoffray family has a long tradition of making excellent wines from this ancient site. Evelyne Geoffray's cooking is even more renowned, as she is tasked with feeding hungry harvesters every September. Her cooking pays homage to the best of French cuisine while showcasing the bounty of excellent Beaujolais regional goods. Thivin's Côte de Brouilly, which has wild fruit, spice, and crunchy minerality, pairs well with Evelyne's rich, passionate cooking.
Tasting Notes: The Geoffray family of Château Thivin was instrumental in creating Côte de Brouilly as a separate appellation in 1938. This wine is richly structured, with tannins and generous black fruits. The dense character will allow it to age.
Pairing: Chicken and turkey
