Domaine Barat - Chablis - Chardonnay
Description
Overview: The Domaine Barat Chablis comes from 40-year-old Chardonnay vines planted on north-facing, clay/limestone soils with Kimmeridgian and Portlandian marl formed during the Jurassic Era. The grapes are hand-picked, then gently pressed. Low-temperature alcohol fermentation takes place at 72F min - 77F max . The wine is racked and matured in stainless steel tanks for 8 months where malolactic fermentation takes place on the lees. Only indigenous yeast is used. All lots are vinified and aged in small stainless steel tanks, lightly fined before bottling.
Tasting Notes: Aromatically this wine has creamy notes of white cake, tart green apples, and a touch of flint. On the palate their are bright refreshing flavors of marine air, lemon meringue pie, and balancing acidity.
