In Miahuatlan, Oaxaca, maestro mezcalero Juan Garcia creates Gusto Historico Tobaxiche Amarillo (Agave karwinskii sp). The agaves are cooked in an underground pit, crushed with tahona, fermented with open air yeasts, and distilled once only in a copper refrescadera still. Juan Garcia is 67 years old as of June 2021, and has been making mezcal on a regular basis since the age of 15.
