Bodegas Menade - La Mision De Menade - Verdejo
Description
Overview: The Mission comes from centenary vines planted in estates with mainly sandy soils. Verdeja has distinctive morphological features: the grapes are smaller, the bunches are more oval and it is more resistant to diseases such as botrytis, because it has a thick skin.
The grapes are harvested by hand and pressed with whole bunches. After fermentation with wild yeasts in stainless steel tanks, the wine is aged, partly in 500-liter French oak barrels, partly in 5,000 and 10,000-liter vats or pipes, and partly in vats of different capacities made with a percentage of clay from Menade's own vineyards.
After aging for about a year, La Misión is bottled and refined for a period of time in the historic cellar. A return to a more earthy origin.
Tasting Notes: The aromas are the expression of authentic verdeja: more rustic, but also more authentic. The analytical parameters reveal higher acidity and more concentrated grapes.
Pairing: Chicken croquettes
