Overview: Ramey Wine Cellars is dedicated to creating high quality, handcrafted wines with balance and richness from the area’s finest vineyards. It’s about a family of wines crafted for the now, but even better with age. Bold, but in check, sensual, these are wines in perfect balance.
As traditionally practiced in Burgundy, we use an anaerobic approach with our Pinot
Noir to preserve freshness. It was aged sur lies with monthly bâtonnage and spent 14
months in 39% new French barrels (François Frères, Demptos and Taransaud). The
wine was then lightly fined with egg white and bottled without filtration.
Tasting Notes: This wine is sourced from a selection of different vineyards, including Bucher along Westside Road. Earthy funk underlies high-toned red cherry, rhubarb and strawberry, threading the needle between richness and crispness. A salty savory finish tops things off.
Pairing: Salmon, tuna and other oily fish, mild sausages, duck, quail, pork and lamb. Fruit-based sauces or chutneys and mushrooms make a strong supporting cast.
